Lohri is remembered as the festival of colours, food and fun. The cold weather does not only add on to the fun of sitting by the bonfire but also adds more taste to the food, more masti to the traditional dancing. Right from the tasty til delights to the evergreen Sarson ka Saag, the traditional food items take the centre stage. This Lohri, we give you four unique sweet Lohri treats that will add on to the excitement factor.
Puffed Rice Toffee
This sweet, yet good for diabetics, Lohri treat is easy to make and tastes heavenly. All you need is 500 gms of puffed rice, 125 gms of mashed jaggery, a half teaspoon of dried ginger powder, a small pinch of salt and one tablespoon of ghee. Add ghee in a pan along with jaggery, cook it on medium flame until the jaggery melts. Bring it to one boil and remove from the heat. Add salt, puffed rice and ginger powder. Stir till all ingredients are mixed. Grease a dish with butter, spread out the mixture evenly. Before it turns solid, cut them into squares and serve.
Rewari and Choco Caramel Bites
This Lohri, instead of eating the regular rewri, try out this caramelized version. To make the caramel sauce, add one cup of brown sugar, four tablespoons of butter and a pinch of salt in a saucepan. Cook for five to seven minutes. Leave it to cool down and refrigerate. Coat some wafers with melted dark chocolate and crushed walnuts. Add a layer of melted white chocolate along with some crushed walnuts as well. Now pour the caramel sauce onto it and coat it with rewri candies. Serve it with hot caramel sauce.
Caramel Popcorn
Lohri and popcorns go hand in hand. Why not go the sweet way this time? To make sumptuous caramel popcorns, all you need is 2 cups of brown sugar, one cup of butter, 5 quarts popped corn, half a cup of light corn syrup, one teaspoon each of salt, vanilla extract and baking soda. Add butter, corn syrup and brown sugar in a saucepan. Simmer for two to three minutes, stirring quickly. After removing it from the flame, add salt, vanilla extract and baking soda. Spread the popcorn on baking sheets, pour the prepared mixture over it and mix well. Put to bake at 250 degrees for 40 minutes. Serve hot!
Rum Ice-Cream with Gajak
Gajak, rum and ice cream, what a deadly combination! Heat a cup of milk, two cups of heavy cream, half nutmeg and half cup of brown sugar in a saucepan, stirring occasionally. In a large bowl, beat two eggs, a pinch of salt and one-fourth cup of brown sugar. Add the mixture to the saucepan and stir well. Strain it into a metal bowl, add one-third cup of rum and refrigerate overnight. Freeze it in an ice cream maker. Before serving, sprinkle some crushed gajak on top to add that twist.
