Happy October everyone! Goodbye summer and hello fall! So it’s time to crank up the oven, put away the grill, prepare some soups and bake some comfort food to enjoy this festive season to the fullest! Here is some stuff to die for. Prepare for a happy landing in your stomach!
Slow Cooker Cheesy Corn Chicken
Ingredients : You’ll need, yellow rice, cream of chicken, whole kernel corn, onion, chicken breasts, and shredded cheddar cheese.
Directions: Place your chicken breasts in the bottom of your slow cooker. Chop up an onion and toss on the top. Glob the cream soup over that. When it is done cooking, drain the corn and toss that in, along with your cooked rice and cheddar cheese. Stir all of that up and give it a few minutes to get all heated.
This cheesy delight is great to put for dinner on a Saturday night party or to have as a nice meal at lunchtime with family.
Tip: Check your calories by using homemade cream made of low fat milk.
As the temperature changes so do our meal choices. Time to pull out the crock pot so you can start making soups, stews and beans for the nippy weather because nothing warms you from the inside, than a good bowl of soup.
Ingredients: This one is a favorite among all those lazy people out there who can’t put in too much time into cooking. The best of this dish is to dump everything in the crock pot and then pretty much forget about it. You need meat of your own choice - chicken/beef/pork, onions, beans, taco seasoning, fresh cream and coriander for garnish.
Directions: Using a large skillet, brown the meat together with chopped onions. Drain and add the meat mixture to your crock pot. Rinse and drain all of the beans. Sprinkle the taco seasoning on top and give it a gentle stir. Cover and cook on low for 6-8 hours. Ladle into soup bowls and garnish with your favorite toppings!
Tip: Add grated potato to make your soup thicker.
How could we do without a ‘desi’ dish to the menu! Embrace Indian flavors by making this vegetarian meal that only takes about 30 minutes to prepare.
Ingredients: Sweet potatoes, loads of veggies of your choice. We suggest you add cauliflower, corn, onions and tomatoes. You’ll also need broth to cook this treat.
Directions: Heat olive oil in a large nonstick skillet over medium-high heat. Add sweet potato, cauliflower, corn, onion, and curry powder and broth and bring to boil. Sprinkle with cilantro and serve with yogurt.
Tip: Add a pinch of sugar while frying the spices to give that nice brown tinge to your dish.
And finally something for the sweet tooth! This is a very creamy and yummy vanilla pumpkin dip that is served with crackers.
Ingredients: vanilla pudding mix, pumpkin and pumpkin pie.
Directions: Simply, mix together instant vanilla pudding mix, pumpkin and pumpkin pie spice in a large bowl. Fold in the thawed frozen whipped topping and chill in the refrigerator until serving.
Tip: Taste your pumpkin for its sweetness before adding sugar.
